r\u00f4le essentiel en tant que tremplin vers l&#8217;emploi, en particulier pour les jeunes et les nouveaux arrivants. Cependant, le secteur continue de faire face \u00e0 d&#8217;importantes p\u00e9nuries de main-d&#8217;\u0153uvre, avec pr\u00e8s de 100 000 postes vacants en 2024 et des restaurants fonctionnant \u00e0 environ 80 % de leur capacit\u00e9. Le projet de recherche <em>Attiser la flamme<\/em>, men\u00e9 par la Re-Seasoning Coalition, a examin\u00e9 les obstacles persistants qui touchent les travailleurs et les consommateurs noirs dans ce secteur, s&#8217;appuyant ainsi sur les conclusions d&#8217;une \u00e9tude nationale de 2022. Le projet repose sur une m\u00e9thodologie mixte, combinant une enqu\u00eate nationale aupr\u00e8s de plus de 2 000 r\u00e9pondants, des groupes de discussion et des entretiens individuels avec des acteurs du secteur, afin de mettre en lumi\u00e8re les d\u00e9fis syst\u00e9miques et les pistes de solutions pour des pratiques plus \u00e9quitables.<\/p>\n\n\n\n<p>Les r\u00e9sultats r\u00e9v\u00e8lent une attente croissante du public \u00e0 l&#8217;\u00e9gard de l&#8217;\u00e9quit\u00e9, de la diversit\u00e9 et de l&#8217;inclusion (\u00c9DI) dans le secteur de la restauration; toutefois, un foss\u00e9 subsiste entre ces aspirations et la r\u00e9alit\u00e9 du milieu de travail. Les jeunes des communaut\u00e9s noires manifestent un vif int\u00e9r\u00eat pour ce secteur, mais se heurtent encore \u00e0 des obstacles en mati\u00e8re d&#8217;embauche, d&#8217;avancement professionnel et d&#8217;acc\u00e8s aux postes de direction. Un travailleur noir sur deux d\u00e9clare avoir \u00e9t\u00e9 victime de discrimination, tout en signalant un acc\u00e8s limit\u00e9 \u00e0 des m\u00e9canismes de plainte s\u00e9curis\u00e9s, au mentorat et \u00e0 l&#8217;avancement professionnel. Par ailleurs, les consommateurs noirs jouent un r\u00f4le cl\u00e9 sur le march\u00e9 des services alimentaires. Affichant des taux de fr\u00e9quentation et de livraison de repas parmi les plus \u00e9lev\u00e9s, ils sont \u00e9galement plus enclins \u00e0 soutenir les entreprises qui s&#8217;engagent en faveur de l&#8217;\u00c9DI.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\">Cette \u00e9tude souligne que la prise en compte des points de vue des personnes noires et la promotion de pratiques \u00e9quitables sont essentielles pour rem\u00e9dier aux p\u00e9nuries de main-d&#8217;\u0153uvre, am\u00e9liorer les perspectives d&#8217;emploi et renforcer la viabilit\u00e9 du secteur. Cependant, ces derniers temps, l&#8217;industrie des services alimentaires peine \u00e0 pourvoir ses postes vacants et \u00e0 retrouver ses niveaux d&#8217;activit\u00e9 ant\u00e9rieurs \u00e0 la pand\u00e9mie. <a href=\"https:\/\/www.restaurantscanada.org\/ceo-note\/the-foodservice-sector-is-grappling-with-nearly-100000-job-vacancies\/\">En 2024, le pays enregistrait pr\u00e8s de 100 000 postes vacants \u00e0 l&#8217;\u00e9chelle nationale et, en moyenne, les restaurants fonctionnaient \u00e0 80% de leur capacit\u00e9 en raison de la p\u00e9nurie de main-d&#8217;\u0153uvre<\/a>.&nbsp;<\/p>\n\n\n\n<p>Cela s&#8217;explique en partie par des conditions de travail difficiles et des obstacles syst\u00e9miques qui entravent la pleine participation des personnes racis\u00e9es et des nouveaux arrivants dans le secteur des services alimentaires. Ce ph\u00e9nom\u00e8ne est particuli\u00e8rement fr\u00e9quent chez les employ\u00e9s noirs. Bien que les jeunes personnes noires \u00e0 la recherche d&#8217;un emploi manifestent un vif int\u00e9r\u00eat pour le secteur des services alimentaires et constituent une population croissante pr\u00eate \u00e0 int\u00e9grer le march\u00e9 du travail, ils continuent de se heurter \u00e0 des obstacles en mati\u00e8re d&#8217;acc\u00e8s, de participation et d&#8217;avancement professionnel au sein de l&#8217;industrie. <a href=\"https:\/\/www.theblackexperienceproject.ca\/\">Les travailleurs noirs font \u00e9tat de discriminations flagrantes ainsi que de partis pris, tant lors de leurs \u00e9valuations de rendement que dans le cadre de leurs interactions avec la client\u00e8le<\/a>.<\/p>\n\n\n\n<p>Ces d\u00e9fis sont aggrav\u00e9s par la mise en \u0153uvre limit\u00e9e d&#8217;initiatives et de politiques d\u2019\u00e9quit\u00e9, de diversit\u00e9 et d\u2019inclusion (\u00c9DI) destin\u00e9es \u00e0 soutenir le personnel au sein des restaurants et des organisations du secteur. On constate un \u00e9cart dans l&#8217;\u00e9laboration et l&#8217;adoption de pratiques inclusives visant \u00e0 soutenir les travailleurs noirs au sein du secteur. S&#8217;inscrivant dans la lign\u00e9e de <a href=\"https:\/\/thereseasoning.org\/resources\/lighting-the-fire\/\">recherches ant\u00e9rieures<\/a>, ce travail examine les changements survenus depuis le premier projet ainsi que les obstacles auxquels l&#8217;industrie des services alimentaires continue de faire face.&nbsp;<\/p>\n\n\n\n<p>Ce projet de recherche visait \u00e0 r\u00e9pondre \u00e0 trois questions :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Quels sont les obstacles socio-\u00e9motionnels et structurels qui emp\u00eachent les dirigeants des services alimentaires au Canada d&#8217;adopter des pratiques de leadership inclusives et antiracistes, et quels facteurs ont influenc\u00e9 les progr\u00e8s, ou l&#8217;absence de progr\u00e8s, r\u00e9alis\u00e9s par les PME dans l&#8217;int\u00e9gration de ces pratiques depuis les manifestations pour la justice sociale de 2020 ?&nbsp;<\/li>\n\n\n\n<li>Quelles sont les r\u00e9alit\u00e9s auxquelles sont confront\u00e9es les personnes noires dans le secteur de la restauration, et quelles sont les politiques ou les m\u00e9canismes de soutien sp\u00e9cifiques n\u00e9cessaires pour permettre aux employ\u00e9s noirs, en particulier aux jeunes, de s&#8217;\u00e9panouir et de progresser dans ce secteur ?&nbsp;<\/li>\n\n\n\n<li>Quelles sont les lacunes des pratiques actuelles en mati\u00e8re d&#8217;\u00c9DI lorsqu&#8217;il s&#8217;agit d&#8217;am\u00e9liorer l&#8217;exp\u00e9rience au restaurant des Canadiens noirs ?<\/li>\n<\/ul>\n\n\n\n<p>Le projet a adopt\u00e9 une approche de recherche mixte, comprenant une enqu\u00eate nationale aupr\u00e8s de plus de 2&nbsp;000&nbsp;r\u00e9pondants, ainsi que des groupes de discussion et des entretiens approfondis men\u00e9s en anglais et en fran\u00e7ais aupr\u00e8s d&#8217;acteurs du secteur en Ontario et au Qu\u00e9bec.&nbsp;<\/p>\n\n\n\n<p>Les donn\u00e9es ont \u00e9t\u00e9 analys\u00e9es \u00e0 l&#8217;aide de cadres conceptuels mettant en relief l&#8217;impact des choix quotidiens, qu&#8217;il s&#8217;agisse de recrutement, de planification des horaires, de formation, de supervision ou du comportement de la client\u00e8le, sur le v\u00e9cu des travailleurs et des entrepreneurs noirs. La perception positive s&#8217;est intensifi\u00e9e au sein de plusieurs groupes, notamment chez les hommes blancs, o\u00f9 elle est pass\u00e9e de 35&nbsp;% en 2022 \u00e0 50&nbsp;% en 2025. L\u2019adh\u00e9sion est demeur\u00e9e stable et \u00e9lev\u00e9e tant chez les hommes et les femmes noirs que chez les femmes blanches et les femmes racis\u00e9es non noires. Par ailleurs, l&#8217;importance accord\u00e9e \u00e0 la priorisation des pratiques d&#8217;\u00c9DI a progress\u00e9 au sein de la plupart des groupes, \u00e0 l&#8217;exception des femmes blanches, chez qui un recul a \u00e9t\u00e9 observ\u00e9. Malgr\u00e9 ces progr\u00e8s globaux, un \u00e9cart persiste entre les attitudes individuelles et la mani\u00e8re dont l&#8217;\u00c9DI est concr\u00e8tement int\u00e9gr\u00e9e dans les milieux de travail des services alimentaires.<\/p>\n\n\n\n<p><strong>La jeunesse noire manifeste un vif int\u00e9r\u00eat pour les carri\u00e8res au sein des services alimentaires, mais leurs r\u00e9sultats sur le march\u00e9 du travail demeurent in\u00e9gaux<\/strong><br>La jeunesse noire continue de manifester un vif int\u00e9r\u00eat et un grand enthousiasme pour les carri\u00e8res au sein des services alimentaires, mais elle se heurte \u00e0 des obstacles tels que les partis pris dans les pratiques d&#8217;embauche et les lacunes en mati\u00e8re de soutien financier. Bien que les taux de rejet visant les personnes noires se soient l\u00e9g\u00e8rement am\u00e9lior\u00e9s au fil du temps, s&#8217;\u00e9tablissant \u00e0 11% en 2025 contre 9% en 2022, la croissance de l&#8217;emploi chez les travailleurs noirs est quant \u00e0 elle demeur\u00e9e relativement stagnante. En revanche, la hausse de l&#8217;emploi a \u00e9t\u00e9 plus marqu\u00e9e chez les hommes blancs, passant de 4&nbsp;% en 2022 \u00e0 14&nbsp;% en 2025. Ces conclusions soulignent une rupture entre l&#8217;int\u00e9r\u00eat exprim\u00e9 et l&#8217;\u00e9quit\u00e9 en mati\u00e8re d&#8217;insertion professionnelle, confirmant ainsi la persistance de barri\u00e8res syst\u00e9miques.<\/p>\n\n\n\n<p><strong>Les obstacles \u00e0 l&#8217;avancement continuent de freiner la progression de carri\u00e8re des travailleurs noirs<\/strong><br>Bien que les travailleurs noirs int\u00e8grent le secteur de la restauration \u00e0 un rythme comparable \u00e0 celui de leurs homologues non noirs, ils se heurtent \u00e0 des perspectives d&#8217;avancement professionnel nettement plus limit\u00e9es. Depuis 2022, ce sont les travailleurs blancs et d&#8217;origine sud-asiatique qui ont b\u00e9n\u00e9fici\u00e9 de la majeure partie de la croissance de l&#8217;emploi et de la mobilit\u00e9 ascendante au sein du secteur. Les travailleurs noirs restent surrepr\u00e9sent\u00e9s dans les postes en premi\u00e8re ligne. Par ailleurs, les r\u00e9sultats d&#8217;une enqu\u00eate men\u00e9e en 2025 r\u00e9v\u00e8lent que plus de la moiti\u00e9 (52&nbsp;%) de la main-d&#8217;\u0153uvre noire d\u00e9clare se heurter \u00e0 des freins \u00e0 l&#8217;avancement professionnel, notamment en raison d&#8217;une sous-repr\u00e9sentation dans les postes de direction et d&#8217;exp\u00e9riences li\u00e9es aux partis pris raciaux. Si 54 % des personnes interrog\u00e9es se disent int\u00e9ress\u00e9es par des formations en leadership et en gestion d&#8217;entreprise, moins d&#8217;un tiers d&#8217;entre elles d\u00e9clarent avoir acc\u00e8s \u00e0 de telles formations.<\/p>\n\n\n\n<p><strong>Les cas de discrimination restent fr\u00e9quents et ont des r\u00e9percussions sur l&#8217;inclusion au travail<\/strong><br>Un employ\u00e9 noir sur deux a d\u00e9clar\u00e9 avoir \u00e9t\u00e9 victime ou t\u00e9moin de discrimination raciale sur son lieu de travail , et pr\u00e8s de la moiti\u00e9 d&#8217;entre eux ont indiqu\u00e9 ne pas se sentir en s\u00e9curit\u00e9 \u00e0 l&#8217;id\u00e9e de signaler ces incidents. Beaucoup ont \u00e9galement indiqu\u00e9 que leur avis n&#8217;\u00e9tait pas pris en compte dans les processus d\u00e9cisionnels, notamment en mati\u00e8re d&#8217;\u00e9laboration des politiques et des menus. Cette tendance se confirme chez les professionnels de la cuisine issus de la communaut\u00e9 noire, 71 % d&#8217;entre eux d\u00e9clarant que leurs id\u00e9es sont sous-estim\u00e9es ou d\u00e9tourn\u00e9es. Ces exp\u00e9riences, combin\u00e9es \u00e0 un acc\u00e8s restreint aux mentors et aux promoteurs de carri\u00e8re, accentuent les d\u00e9fis syst\u00e9miques et nuisent au sentiment d&#8217;inclusion et d&#8217;appartenance au sein des services alimentaires.<\/p>\n\n\n\n<p><strong>Les consommateurs noirs constituent un moteur essentiel de l&#8217;industrie des services alimentaires et privil\u00e9gient les entreprises qui s&#8217;alignent sur les principes d&#8217;\u00c9DI<\/strong><br>Les consommateurs noirs jouent un r\u00f4le cl\u00e9 dans la stimulation de la demande au sein des services alimentaires : 78&nbsp;% d&#8217;entre eux d\u00e9clarent manger au restaurant ou commander des plats \u00e0 emporter au moins une fois par semaine, comparativement \u00e0 62&nbsp;% des consommateurs blancs et \u00e0 51&nbsp;% des consommateurs racis\u00e9s non noirs. Cela fait des consommateurs noirs un segment de premier plan dans la consommation globale du secteur. De plus, une part importante des consommateurs affirme privil\u00e9gier les entreprises engag\u00e9es en mati\u00e8re d&#8217;\u00e9quit\u00e9, de diversit\u00e9 et d&#8217;inclusion (\u00c9DI), ce qui se traduit par un traitement juste des employ\u00e9s et une prise de position publique en faveur de la justice raciale. Au-del\u00e0 des engagements g\u00e9n\u00e9raux en faveur de l&#8217;\u00c9DI, les employeurs et les entreprises doivent mettre en \u0153uvre des mesures concr\u00e8tes et mesurables afin de soutenir une main-d&#8217;\u0153uvre diversifi\u00e9e. Cette \u00e9tude souligne la n\u00e9cessit\u00e9 d&#8217;une formation continue et d&#8217;une r\u00e9flexion approfondie, tout en invitant les employeurs \u00e0 examiner la mani\u00e8re dont les partis pris et les obstacles syst\u00e9miques s&#8217;articulent au sein de leur organisation. Cela ouvre \u00e9galement la voie \u00e0 la mise en place de normes et de m\u00e9canismes de responsabilisation \u00e0 l&#8217;\u00e9chelle du secteur, afin de favoriser des progr\u00e8s constants.
